The Ingredients of Kosha Mangsho:

1: Mutton 500g cut into pieces

2: 3 large onions finely sliced

3: 2 tomatoes pureed

4: 1/4 cup mustard oil

5: 1 teaspoon cumin seeds

6: 2 bay leaves

7: 4 to 5 green cardamom pods

8: 2 to 3 cinnamon sticks

9: 5 cloves

10: 1 tablespoon ginger garlic paste

11: 1 teaspoon turmeric powder

12: 2 teaspoon red chilli powder

13: 1 tablespoon coriander powder

14: 1 teaspoon garam masala

15: Salt as per your taste

16: Fresh Coriander leaves for garnish

Let’s Make the Recipe of Kosha Mangsho

1: Prepare the Mutton:

Heat mustard oil in a green-bottomed pan until it starts to smoke and let it cool slightly.

2: Infuse Aromatics:

All you have to do now is to heat the oil and add cumin leaves, cardamom, cinnamon, and cloves. Cook these ingredients well.

3: Saute Onions:

You have to take a frying pan and put your chopped onion in it. Not bare onion but heat some oil and fry the onion in it until golden.

4: Add ginger garlic paste:

Add garlic paste and ginger.

5: Incorporating the Tomatoes:

Add the pureed tomatoes to the pan and cook until the oil separates from the spices and forms a thick rich bean paste.

6: Introduce the Mutton:

Add the mutton pieces to the spices making sure it is cooked well. Cook on high heat until the mutton skin is flaky and crispy.

7: Spice it Up:

My Suggestion About Kosha Mangsho

I prefer an iron pan for making kosha mangsho as slow cooking on an iron griddle darkens the color of the mutton. You can also use a pressure cooker to make Up. kosha as well to avoid the extra cooking time required. Cooking on an iron pan gives the kasha mangsho the desired color that we want.
